The traditional way would be to fix the roof to crucks, which are pairs of vertical posts extending from plinth level (on which they sit) up to and beyond eaves level, where they then curve inwards towards the ridgeline, either as one curved piece of timber, or two, jointed at eaves level. This way the roof is bearing on the plinth, not the cob, and the cob is merely acting as panels between the crucks.
