Patrick, as Darel mentioned, historically, willow branches, bamboo, and types of reeds have been used for wattle. It is also possible to use some kind of lattice as well . Daub, of course is the soil and straw mixture that is applied to the wattle. Note that also historically the wattle was tied with straw rope, hemp twine, etc., natural materials.
