[Cob] roof first, roof second...posts?

Since you are planning a *huge* house, then I would
definitely suggest building the roof first.
Unless you are planning to use heavy equipment or
have tons of labor, this project will take some time.

We built our roof first, had free labor and did tractor
cob, (working mostly on the weekends) and it took us
5-6 months for our 600 sf. After a couple of months
I removed the temporary posts to sheath our loft.

As for your rafters you may mill yourself, I'd recommend
doing that now while the sap is down and then allowing
it to dry while your still planning.
