I would be easy enough to make the planters completely 
waterproof (personally, I'd just sink waterproof plastic, 
ceramic, or glass containers directly into the cob), but 
most plants also need to drain and can't sit in water.  So 
you'll need to water sparingly and keep an eye out for 
symptoms of over-watering.
