It's called story and a half, a recognized category. A good idea. The
trade-offs are more materials in the roof, heavier, might be a little harder
to build. (a doghouse to practice on might be good, both for the cob and
the roof slope)
Someone here surely knows the slope that provides the best tradeoff between
space and ease of working. Past a certain point you really need the safety
harnesses to work on the roof.
