[Cob] Winter Cobbing

So it looks like I'm going to be involved in building a cob oven for someone
other than myself.  That's great news for me!  However, it may need to occur
in the winter time here in Portland, Oregon.  Rain, damp, cool temps.  Is it
reasonable to expect the job to be successful with a nice covering tarp
protecting the work area?  The cob will dry slower but still enough?  Are
there any obvious factors I need to consider?
