Well, from what I've read, plus from what I pretty much plan to do myself, you
can leave shallow channels for the wires to fit into.  These can then be
fitted with some sort of cover (plastic or metal)...both for safety and
convenience of access when necessary.

As for plumbing, I'd do the same thing, just on a larger scale.
