Hi Rob- yes pulling down to the studs and doing a "slip form" style wall with light straw clay would be almost easy. You might be able to use the plywood as a "form "on the outside, left in place temporarily, with a12" board as the inside form. Oiling the plywood, or coating it with an eco friendly sunstance to keep the drying cob from sticking is suggested. CLay-cob and straw or sawdust wodchips are used in a thick doughy form to place between a shuttering of boards, left to dry a bit, and the next level is placed, very little tamping, no stomping : ), and eco friendly. You can start now, and let it dry all summer, be ready to finish plaster by fall. this is my favirotie way to build actually...let the "grandfathered" bldg serve as your tip of the hat to convention, and do what you want to it thereafter. There is a small book called Mooseprints that teaches this, and also it is very popular in Germany, been done for decades in modern times, as well as historically. Many barns in WI are made this way, and there is some retrorenovation going on with them to keep them that way. here are some websites on this method, plus related.
