[Cob] Interior Walls

Happy New Year -
 
I want to build a cob home with post and beam ceiling/roofing, stone  floors, 
fireplace and a cement foundation.  (In the planning stages  right now which 
will include taking workshops in Oregon at the appropriate  time.) 
 
Any suggestions on how to go about building interior walls?  
 
Is it appropriate/feasible/realistic to use cob for interior walls  too?
