Cob: flat cob surfaces

They are trimming the surface before the cob dries, either with a sharp flat spade-like thing while standing on the top of the wall, or with a sharp mattock- or adze-like thing while standing on the ground, or on something to raise them off the ground. This is standard cob-building practice in Devon and elsewhere, where cob is mixed, stamped and pared, not `hand-sculpted'. They are not using forms / shuttering.
