Amanda Peck just reminded me of a Canadian program I've heard of called WWOOF - "Willing Workers On Organic Farms" - organic farms often include organic buildings and often "wwoofers" will have the oppertunity to assist and learn these construction methods, while still being in close touch with organic methods of food cultivation.  Just a thought.
