it would be cordwood, definitely
with cob as the mortar glue.

One thing to remember with cordwood is the problem with "thermal
nosebleed"...when the wood or mortar shrink away a little bit and allow
cold drafts to enter alongside the wood gaps, and your heated interior
air to escape, this wasting fuel.
This can be combated with double wall cordwood I hear, but this means
insulating in the middle, and making two cordwood walls. Some people
plaster over the entire outside, or inside I understand to solve this
problem. If you like the round end log look inside then the outside
plaster will cover up the look there too.
there are several wall systems, described in the cordwood books, which
help prevent the nosebleed, but it is something to keep in mid for
novice builders.
So if the cob mortar does not shrink, but the wood does, slightly, then
you wind up with a problem, sometimes hard to locate where in the house
the energy loss is.
my 2 cents for the day (g)
