bentonite clay mixed with perlite (crunched styrofoam peanuts might work as
well)
end-grain wood
They're all pretty fair humidity buffers, according to this article by Tim
Padfield, who works in the really obscure field of Conservation Physics. He
also once took a cob workshop.
