Maggie,

Have you checked out Kiko Denzer's books? You can read more abt the 
book How To Build Your Own Earth Oven here: 
http://www.handprintpress.com/booklist.htm The instructions are 
straightforward and easy to understand. I have an oven in my back 
yard that I built several years ago, following that book.
